Thanksgiving is just around the corner, and most people are looking forward to indulging in some of their favorite foods. The best part of eating a big turkey dinner is definitely having a delicious slice of homemade pie for dessert.

 

But wait, it gets better.

 

This year you don’t have to feel guilty about eating a piece or two of pie. That’s because I’m going to be sharing my favorite superfood pie recipes with you.

 

Whether you’re cooking at home, or looking for a recipe to bring to a friend or family member’s home, I hope you’ll give the following healthy and delicious recipes a try.

 

Creamy Superfood Pumpkin Pie Recipe

 

Pumpkin pie is a classic holiday recipe. And the good news for pumpkin pie lovers is that its main ingredient, pumpkin, is one of the most powerful superfoods out there.

 

Pumpkins get their orange color from beta-carotene, a provitamin that is converted to vitamin A in the body. Beta-carotene is also known for its immune-boosting powers, is essential for eye health, and has even been linked to preventing coronary heart disease.

 

Make this superfood pie for your next family gathering.

 

Ingredients:

  • 4 cups of baked pumpkin (Scoop the seeds out, cut the skin off, and bake at 350°F for 1-1.5 hours. When it’s soft, it’s ready.) OR 2 cans of pumpkin puree
  • 1 can full-fat coconut milk
  • 1/4 cup rolled oats
  • 1/3 cup honey (or other sweetener of your choice, such as brown rice syrup — that’s how you easily make this pumpkin pie vegan!)
  • 2 tsp. cinnamon
  • 2 tsp. pumpkin pie spice
  • 1 tsp. maca
  • 1/2 tsp. Himalayan or celtic salt
  • 1 vanilla bean, seeds scraped, OR 1 tsp.vanilla extract

 

Gluten Free Crust:

  • 3/4 cup buckwheat flour
  • 3/4 cup any gluten-free all-purpose flour
  • 1/4 cup gluten-free steel-cut oats
  • 1 tsp. salt
  • 1/3 cup honey
  • 1/2 cup coconut oil, melted
  • 4 tbs. water

 

Directions:

#1 Crust: Preheat oven to 350°F. Combine all crust ingredients in a large bowl. Spread coconut oil over a pie pan. Press the dough evenly into the pan. Bake for 15 minutes.

 

#2 Pie: Blend all ingredients together until smooth, and pour into the baked crust. Bake 30 minutes, let cool, then refrigerate for a few hours for the pie to thicken and set.

Raw Coconut Cream Superfood Pie Recipe

 

Coconut cream pie is another classic holiday pie recipe.

 

The pie itself is definitely sweet, but it’s light enough to enjoy even after you’ve stuffed yourself with a big meal.

 

And if you’re worried about your health, a little bit of coconut might just be the answer.

 

This superfood ingredient is the healthiest oil in the world. It’s comprised of medium-chain triglycerides that give it the ability to kill disease, bacteria, fungi, yeasts, viruses, and more.

 

Try out this recipe the next time you decide to make a coconut cream pie.

 

Ingredients:

Coconut Cream Filling

  • 2 cups soaked chia ( soaked in 2 cups of coconut water)
  • 4 cups coconut meat (6-8 coconuts)
  • ⅛ cup almond milk
  • ¼ cup lucuma powder
  • 1-2 vanilla beans (scraped)
  • 1 cup xylitol powder
  • 2 tsp. stevia powder
  • 1 tbs. Irish moss gel or 1 tsp. Irish moss powder
  • 4 tbs. coconut oil
  • 4 tbs. cacao butter (melted)
  • 1/2-1 cup shredded coconut (for the top)

 

Directions:

Hemp Seed Pie Crust

  • 2 cups hemp seeds
  • 8 medium dates
  • 2 tbs. coconut water
  • pinch of salt

 

Note: You can find these ingredients in your local health food store. If you are having trouble finding any of them, do an online search for stores that provide them near you.

 

For the Crust

#1 Process the hemp seeds for 1 minute in a food processor.

#2 Add the rest of the crust ingredients and form into a dough.

#3 Press this dough into the bottom of a spring-form pan or pie dish.

#4 Place covered in a freezer while you make your pie filling.

For the Coconut Cream Filling

#1 Crack open your coconuts carefully with a cleaver and scrap out 4C coconut meat.

#2 Place in the refrigerator.

#3 Using the coconut water, soak your chia seeds, completely covering, for about 30 minutes or until they have absorbed the liquid.

#4 Prepare all your ingredients in a high-speed blender using a tamper to blend your cream to thick and barely pourable consistency. (This will give you the best results after it chills and continues to set.)

#5 Place the filling on top of your crust, spreading evenly with a spatula.

#6 Sprinkle your shredded coconut over the top of the pie.

#7 Freeze for at least 4 hours before serving.  Or freeze overnight and allow to thaw for 1-2 hours before serving.

Blueberry Superfood Pie Recipe

 

There’s nothing more refreshing after dinner than a pie made with fresh, sweet, and juicy fruits. And what better ingredient to use than blueberries.

 

Blueberries are packed with antioxidants. These antioxidants protect our bodies from damage by free radicals, which are unstable molecules that can damage cellular structures.

 

This damage contributes to aging and developing diseases like cancer.

 

This pie should, of course, be eaten in moderation as is does contains unhealthy fats and sugars. But there’s no need to feel guilty while indulging as you’ll certainly get a full serving of blueberries, a superfood fruit.

 

Ingredients:

 

  • 2/3 cup agave nectar
  • 3 tbs. cornstarch
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • 4 cups blueberries
  • 1 recipe pastry for a 9-inch double crust pie
  • 1 tablespoon butter

 

Directions:

 

#1 Preheat oven to 425 degrees F (220 degrees C).

#2 Mix agave nectar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.

#3 Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 – 3/4 inch-wide strips, and make lattice top. Crimp and flute edges.

#4 Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.
